Vegan Gluten Free Banana Bread


1⁄3 cup coconut oil

1⁄2 cup raw or coconut sugar

2 cups Gluten Free Flour Mix (see below)

1 1⁄2 tsp baking powder

1⁄2 tsp baking soda

3 very ripe bananas, mashed

1⁄2 cup “milk”

1 tsp vanilla

1 tsp cinnamon

1⁄4 tsp ginger, nutmeg, and allspice

1⁄2 cup chopped walnuts or pecans


Preheat the oven to 350°F. Grease an 8 1⁄2 X 4 1⁄2 inch bread pan.

Cream the oil and sugar until fluffy. In a separate bowl, mix together the flour, baking powder,baking soda and spices. Combine the oil/sugar and flour mixtures, then add the bananas and milk, mix well. Gently mix in the walnuts, and pour into the bread pan. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.

Total prep and baking time: 1 hour

Makes 12-15 slices


Gluten Free Flour

1 cup brown rice flour

3/4 cup coconut flour

2/3 cup tapioca flour

1/2 cup gf oat flour

1/2 cup garbanzo bean flour

1/4 ground flax seed

Mix all the flours well.  Use 1 cup of the gluten free flour to replace 1 cup of all-purpose flour.
